This is my comfort food…mashed potatoes & gravy This plant-based mushroom gravy is so good I could just eat it by itself!
EASY Vegan Mashed Potatoes
– 2 big white potatoes, washed, chopped and boiled in hot water until soft (I never bother peeling)
– 2 tbsp vegan butter or olive oil
– 1/2 cup unsweetened non-dairy milk
– salt & pepper
Drain the boiled potatoes and mash together with all of the above, add more if you want them creamier
EASY Mushroom Gravy
– 1 cup diced onion
– 1/2 sliced mushrooms
– 1 tbsp minced garlic
– 1 tbsp nutritional yeast
– 1 tsp soy sauce
– 1 cup vegetable broth
– 2 tbsp flour
– 1/4 tsp each salt & pepper
In a saucepan saut the mushrooms, onions and garlic, stirring regularly until soft and fragrant (use a little water if they stick to the pan)
Add the salt, pepper, flour and nutritional yeast and stir until everything is coated
Add the broth & soy sauce and bring to a boil then simmer for about 5 minutes until sauce is thick, keep stirring
Add more salt or pepper to taste, more broth if too thick
